Winter is slowly settling over our beautiful Ardennes, bringing with it that irresistible desire for warmth, togetherness, and delicious homemade comfort food.
To celebrate the season, we’re sharing a traditional local recipe straight from our region: Ardennes “Rousses” with onions and bacon.
Perfect after a snowy walk or a visit to one of the nearby Christmas markets, this hearty dish captures the authentic flavours of the Ardennes.
🥔 Recipe: Ardennes Rousses (serves 4)
Ingredients:
1 kg firm potatoes
3 large yellow onions
200 g smoked bacon cubes
40–50 g butter
Salt and pepper
Fresh chopped parsley
Preparation:
Peel the potatoes and slice them into thick rounds. Thinly slice the onions.
Melt the butter in a large pan, add the bacon, and fry until golden.
Add the onions and let them soften gently.
Add the potatoes, season lightly with salt and pepper, and cover.
Cook over low heat for 25–30 minutes, stirring occasionally.
Uncover the pan at the end of cooking and let the potatoes brown until nice and crispy.
Sprinkle with fresh parsley before serving.
